Breakfast burritos - why have I never tried these things before?? Oh, right, because I used to hate eggs and salsa, two ingredients that often frequent the bb. Regardless, I like them now, and I've tossed them into a clean and delectable hand-held breakfast treat that you will want to eat about 3 of (resist the temptation!). This recipe came to be through my recent joining of Weight Watchers (more on that later!). I was browsing some of their breakfast ideas in the WW app, hoping to find inspiration for my meal prep. I saw a recipe for a burrito, but I didn't quite care for all of the ingredients used, so I decided to take a shot and make my own. These bad boys are filled with all of your favorite ingredients - eggs, white cheddar, crisp bacon, salsa, and wrapped a lovely sprouted grain tortilla (this brand is GOOD). At 10 WW SmartPoints a piece, they are a great pair with a piece of fresh fruit to start your morning off right!
Clean Eating Breakfast Burritos:
Makes 6 Servings, 10 WW Smart Points Per Serving
Ingredients:
5 large eggs
8 oz liquid egg whites (can also use 5 regular egg whites)
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 c 1% lowfat milk
1 package Wellshire Sugar-Free Dry Rubbed Bacon (sold exclusively at Whole Foods)
3 oz white cheddar cheese (I used Trader Joe's Wisconsin Sharp Cheddar)
6 tbsp salsa (I used Simple Truth Organic Mild Salsa)
1 package Maria & Ricardo's Sprouted Grains Tortillas, Soft Taco Size
olive oil cooking spray
Directions:
1. Preheat oven to 400°F. Place bacon in a single layer onto a foil lined baking sheet. Bake bacon until crisp, turning over halfway through. About 20 minutes.
2. While bacon is in the oven, prepare the eggs. Add eggs and whites to a bowl with milk, salt, pepper, and garlic. Whisk until combined. Heat a large pan to medium and spray with cooking spray. Pour in eggs and scramble, cooking about 5-8 minutes. Set aside off heat.
3. Also while bacon is frying/ eggs are cooking, grate cheese and set aside.
4. Remove bacon from oven when done and drain on paper towels. Remove foil and place tortillas on tray in a single layer, they may be slightly overlapping. Place in oven for 1 minute to warm.
5. Chop your bacon and set aside. Begin assembling burritos: place eggs on tortilla, grated cheese, 1 tbsp salsa, and chopped bacon (about 1 1/2 slices per burrito). Roll up and enjoy! Can be wrapped in plastic wrap, stored in the freezer, and reheated in the microwave throughout the week.
