Tuna salad: you either love it or you hate it. In my case, I hated it for many years, but recently decided I was going to make a better-for-you tuna salad option, and TRY IT. By miracle of miracles, I really like it! The trick to the "better-for-you" part? Mashed avocado instead of mayo! Cut down on the yucky fats and pump up those healthy avo-fats! For someone who dislikes both tuna and avocados, me enjoying this salad is a pretty amazing feat. This tuna salad is light and filled with both wonderfully smooth and crunchy textures. It can be enjoyed alone, with your favorite crackers (I'll be enjoying mine with whole wheat pita crackers), or open face on a slice of toasted bread. My recipe makes 2 servings, and at just 4 Weight Watchers SmartPoints per serving, its got a lot of bang for your buck! This recipe is made with one can of tuna, and half an avocado - if you don't have plans for the other avocado half, double the recipe to make four servings instead of two. Enjoy this salad immediately, or store in a plastic container with a piece of plastic wrap completely covering (touching) the surface to prevent it from turning brown.
Avocado Tuna Salad
Makes 2 Servings, 4 WW SmartPoints Per Serving
Ingredients:
4 oz (1 can) drained Trader Joe's half salt albacore solid white tuna in water
1⁄2 avocado
1 hard boiled egg, yolk and white separated, white small dice
1 tbsp Vlasic Sweet Relish
1⁄8 tsp salt
1⁄8 tsp black pepper
1⁄8 tsp garlic powder
1⁄8 tsp onion powder
1 rib celery, small dice
1⁄4 tsp fresh lime juice (a light squeeze)
Directions:
1. Peel and chop celery into a small dice; separate egg yolk from white and chop egg white into a small dice. Set aside.
2. Add avocado, egg yolk, salt, pepper, garlic powder, onion powder, and squeeze of lime juice to a bowl and mash together until creamy.
3. Add drained tuna, egg whites, celery, and sweet relish to mashed avocado mix and fold in. Adjust your seasonings to your liking as necessary.
Enjoy immediately or store in a container with plastic wrap completely covering the surface to keep air out and prevent from turning brown.
